If that works for you, great. (I am familiar but not a fan of sweet chilli flavour generally myself.). Just saying there are huge variety of other chillis flavour s from around the world that are hard/near impossible to produce at home. I do enjoy a lot of those.

I guess ioc's point was about the many things you can do with chillis.

I don't get the adulation that Tabasco has. There's a generic hot sauce you can get here that's just superb, and infinitely better than Tabasco (imho, oc).

Canada Thais have sweet chill sauce for dips otherwise its just chopped cooked chilli in the food I eat it every day mate

In India, chilli sauce is eaten as a condiment with (usually) dry food (fried stuff, etc) or perhaps as a dip.

It's never eaten with curry.

Apart from children, people rarely associate being able to eat max chilli heat with being macho. You either like your food hot and spicy or you don't. South India and Sri Lanka are the subcontinent's major ringburner territories and tend to have much spicier food than the north and east.

Sorry mate, there are processes done to chillis that you can't easily do at home, - smoking, aging, fermenting etc. So fresh for some things (I caught the end of the BC pepper harvest when I was home last, beautiful things you can do with them) and sauces for others.

Put chopped red and green chilli in soy sauce and its like a garnish for plain rice, 3 table spoons of soy

We chilli bushes (Not cold fannys) in our garden and cook it in with food not sauce, sauce is for gayers

If you get a decent Indian curry there's no need for any chilli sauce.
If however you're a fat fucker who"s into American style huge portioned fodder I wouldn't know

I've not; the stuff I've used seems to be required extensively in stir fries, rather than the chili only version.

However, if you need a nakedly hot, tasty sauce for any asian dish, you can make this at home......seems to b served at quite a few Thai restaurants in Thailand.

Lots of thai bird chilis, sliced, added to plenty of fish sauce, dollop of lemon juice and a spoonful of sugar.

The longer you leave it, the hotter it gets. Brutal the following morning.

I have never tried Lee Kum Kee's sriracha or the ready-made mayo, some of their other sauces and dark soy. About the only time I have sriracha is homemade mayo on a bahn mi.

Have you tried sambal oelek, similar to the chilli garlics, with chunks and seeds of chilli, slightly different taste?

I'v got a bottle of Lee Kum Fuck's sriracha mayo in my fridge. I didn't need it to help me tell the difference from chili garlic sauce, since it's gloopy and orange. A friend gave it to me a few years ago; haven't touched it recently.

If you have a blender make ıt yourself buy whıte cabbage carrots caulıflower hot peppers and blend ıt then add tomato puree and whatever other ingredients you wish to put with it and cook ıt .
